Chinese Chicken Salad

A refreshing and zesty Chinese Chicken Salad packed with tender chicken, crunchy cabbage, and juicy orange segments. Infused with the bright flavors of orange zest, fresh ginger, and garlic, this dish is perfectly balanced with a tangy vinegar and lemon dressing, lightly sweetened with stevia. Ingredients

100 g of chicken
2 1/2 cups cabbage, chopped
1 orange
Zest of 1 orange
3 teaspoons green onion, minced
2 tablespoons vinegar
2 tablespoons fresh lemon juice
1 1/2 teaspoons fresh ginger, grated
2 cloves garlic, minced
Stevia, to taste

Cooking Instructions

Salt & pepper, to taste Boil the chicken in a pot of water, drain. Shred the chicken and place in the refrigerator. To make the dressing, mix the orange zest, vinegar, fresh lemon juice, ginger, garlic, Stevia and salt & pepper. Chop up the inside of the orange. Mix the cabbage, chicken, orange and dressing in a bowl.
